NOTE: made with same kind of grape used for Barolo, Nebbiolo wine could be released for marketing even just one year after the harvest: we prefer ageing it longer and usually we start selling after 3 years at least. In fact, the content of tannins is normally very high and is attenuated by the action of the time. Before bottling, aging takes place in steel or, better, in concrete tanks. Then a very limited production (about 1500 bottles) is aged in Slavonia oak barrel (1000 liters) for about 12 months: the light toasting gives the wine a pleasant hint of wood, but never prevailing on the characteristics of wine.
